How to Make Stuffed Okra

Stuffed Okra


250 g        Fresh Okra

1                 tablespoon minced coriander leaves

1                 tablespoon cumin powder

2                 teaspoons lemon juice

1/4            teaspoon red chili powder

1/2            teaspoon salt

1/2            teaspoon black pepper

1                 onion cut small slices

6                teaspoons ghee or oil


Wash and dry the Okra, cut the top and tails. In a large bowl mix the coriander, cumin, red peppers, salt, and black pepper.

Cut the Okra from the side and stuff it with the mixture. heat the oil in a large saucepan and fry and stir the onions few minutes till golden brown, and add the Okra in one layer,  and cook on low heat without cover turning slowly till the Okra get a  light-brown color for 15 minutes or less. Then add the lemon juice and cover the pan, lower the heat and simmer for 5 to 6 minutes. Then remove from heat and serve.
