Duck Breast with Orange and Walnut

Ingredients:

4        pieces duck breast

1         large chopped onion

1        stalk celery minced

1        chopped carrot

2        cups chicken broth

2             chopped oranges and slices of boiled carrots for decoration

1             large orange cut into slices for flavor

60 g      walnut cut in half

Juice of one orange

 Frying oil

Salt and pepper to taste

Preparations:

Heat the oil and fry each duck piece for 20 minutes until golden color then turn it to other side and fry again until golden color then set the pieces aside. Drain all the oil from the pan except one tablespoon.

Add the vegetables to the pan stir -fry with continue stirring.

Transfer the vegetable to large tray put the duck pieces on the tops. Add the chicken broth, salt, pepper to taste. Bake in 325°F oven for 30 minutes.

To serve slice the duck pieces and put them in a serving dish then add the orange slices and walnut on the top. 

Put the orange slices witch for flavoring in small skillet with one cup of water and bring it to boil for 5 minutes then drain to remove the excess water from them and divided them on the top of the duck pieces 

Cook the vegetables with the orange juice serve it with the duck slices and boiled carrot.
