How to Make Aïoli Sauce

Aïoli Sauce

8     cloves garlic
3     eggs yolks
2     cups olive oil
2     tablespoons lemon juice
1     teaspoon Dijon mustard
1     teaspoon kosher salt
½  teaspoon white pepper
In medium bowl, mash the garlic to a very smooth paste. Transfer to a food processor, then add the egg yolks, process until the mixture smooth while the processor is running add the oil drop-by-drop or add the oil like a thin thread continue until you add a whole cup of oil. stop the processor, and add a lemon juice stir it together a little then add the another cup of oil to the mixture. Now you can do this (process for one second and stop stir it then repeat the same procedure until you get a smooth and creamy mixture like mayonnaise. Put the Aïoli sauce in a clean jar or container in the fridge.
