Potatoes with ginger
Ingredients:
2 lb potatoes
3 tablespoons ghee or oil
2 tablespoons fresh ginger
2 large tomatoes
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon anise powder
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
Salt and pepper to taste
Preparations:
Boil the potatoes until done then let it cool down. Peel the potatoes and cut into small slices. Remove the skin from the ginger and cut to pieces, put them in the blender with 4-5 tablespoons of water then proceed on high speed for 5 minutes.
Cut the tomatoes into small pieces. In a large saucepan put ghee or oil then add the cumin seeds, anise seeds and fry stirring continuously, then add the ginger mixture, turmeric powder cook for 2-3 minutes, then add the tomatoes and continue stirring until the tomatoes become like puree add cumin powder, coriander powder, and chili powder, stir it 2-3 times more.
Add the potatoes slices with one cup of water and salt mix together and cook on a low heat with the cover on for 15-20 minutes.
Serve with rice and salad
