How to Make Green Beans Salad with Olive Oil

Green Beans with Olive Oil
Ingredients:
2 pound green beans
1 large onion chopped
2 cloves minced garlic or more if you prefer
4 tablespoons olive oil
1 tablespoons lemon juice or as needed
1 cup of water
½ teaspoon black pepper
Salt to taste
Preparations:
In a medium saucepan, put olive oil and chopped onions fry them until they become transparent. Add the beans and cumin fry for 5 minutes stirring continuously until their color are bright green, add the water bring it to a boiling point cook for 6 minutes then cover the saucepan and reduce the temperature to very low-heat; let it cook for 8 – 10 minutes or until tender.
Add the lemon juice, minced garlic, salt and pepper stir it together, cover the saucepan and cook for 2 – 4 minutes. Remove from heat; transfer the beans to a serving plate.
Serve cold.

Tomatoes and Potatoes Salad with Yoghurt
Ingredients
1/2 cup potatoes
3 tomatoes
6 tablespoons yoghurt
2 tablespoons chopped cilantro leaves
1 teaspoon lemon juice
1/2 teaspoon fried cumin seeds
1/4 teaspoon red hot pepper flakes (optional )
1 tablespoon fresh coriander leaves
1 tablespoon or less lemon juice
Salt and pepper to taste
Preparations
Cumin and yogurt sauce
In a medium bowl add yogurt, cumin seeds, lemon juice, red hot peppers and salt.
Mix it together then put it in a cool place or fridge for 15-25 minutes.
Boil the potatoes in salted water until it’s done.
Drain and peel the potatoes skin the cut into slices.
Put the potatoes while it’s hot in the cumin and yogurt sauce.
In a small bowl put the tomatoes pour hot water and leave it for 20 minutes or you can boil water and drop the tomatoes in the hot water for 5-7 minute and remove it.
Peel and cut each tomato into 4 parts.
Transfer the potatoes to a serving dish, add the tomatoes on tops. Garnish with Cilantro leaves.

Eggplant Salad with Mayonnaise
Ingredients:
3   large eggplants
2   chopped green peppers
2   tablespoons olive oil
1   tablespoon vinegar
1   cup mayonnaise
1   can flaked tuna fish
1/2   cup goat or crumbled feta cheese
1/2   chopped onion
1/4   cup chopped parsley
1/4   cup chopped fresh mint leaves
Salt to taste

Preparations:
Wash the eggplants and bake them in the oven until done when it’s cool remove the skin and drain the excess water. Cut the eggplant and the green peppers into small pieces. Also the parsley, mint leaves, onion and tuna flakes. In a large bowl put all the ingredients and mix them with mayonnaise, crumbled feta cheese and olive oil. Transfer the mixture to serving dish, and put in the fridge until serving Serve cold.

Beets and Sweet Potatoes Salad
Ingredients:
3       large beets
3       tablespoons finely chopped parsley
2       large sweet potatoes
2       tablespoons olive oil
1       chopped medium onion
1       tablespoon lemon juice or less
1       teaspoon vinegar
3/4    cup finely chopped walnut
1/4    cup finely chopped apricots or currants (optional)
Salt to taste
Preparations :
Boil and peel the beets and sweet potatoes then cut into small cubes. Mix oil lemon juice and vinegar together. In large bowl add the beets and the sweet potatoes, parsley, apricot very small pieces, currants pieces, onions, chopped walnut and salt then the oil and vinegar mixture. Transfer to a serving bowl, garnish with nuts.

Chicken Salad with Lettuce and Peppers

Ingredients:

2        cups cooked chicken cut into julienne

4       white radish peeled and cut into julienne

1        red pepper cut into julienne

1        green pepper cut into julienne

1        yellow pepper cut into julienne

1        lettuce cut into julienne

1       teaspoon chopped very fine green fenugreek leaves

Salsa

4        tablespoons vegetable oil

2        tablespoons sesame oil

1        tablespoons fried sesame seed

2        tablespoons white vinegar

2        tablespoons soy sauce

2        cloves minced garlic

2       chopped green onion

Salt and pepper to taste

Preparations:

In a large bowl add chicken, radish, peppers, lettuce and chopped fenugreek and mix them together. Mix all the salsa ingredients very well then add it to the salad. Sprinkle the sesame seed on the top of the salad. Garnish with chopped green onion.

How to Make Avocado Salad with Oranges

Avocado Salad with Oranges

Ingredients:

1            large lettuce or two bunch of arugula leaves

1            chicory lettuce

5            red kale leaves

2            large avocado fruit

3            oranges

2            tablespoons chopped parsley

Marinated Sauce

2            tablespoons olive oil

1            tablespoon white vinegar

1            tablespoon walnut oil

½          juice of lemon and its peel

1            clove of garlic

Salt and pepper to taste

Preparations:

In large or platter arrange the red kale leaves around the platter.

Cut the lettuce leaves or arugula and the chicory leaves then put it on the top of the red kale in the platter. Mix olive oil, vinegar, walnut oil, lemon juice and peel, salt and pepper. Remove the skin of the avocado and cut it into slices, put them in the bowl then add the mixture on the top to cover all the avocado slices. Peel the skin of all the oranges then loosen the sections and remove the seeds from all the sections then add it to the lettuce. After the avocado been marinated, add it to the lettuce and the oranges, add the chopped parsley on the tops

Serve this salad with herb bread.
